Waipahu grew up around the Oahu Sugar Company mill, which ran from the 1890s until the last harvest in 1995, and the town’s plantation museum still tells the story of the Hawaiian, Chinese, Japanese, Filipino, Portuguese, Korean, Okinawan and Puerto Rican workers who built it. That mixed-plate heritage is still what local food tastes like – and it runs straight through Danjah Dog’s menu, from Spam and podagee sausage dogs to Cazi’s kalua pig and lau lau bentos.
