Waimalu means “sheltered water,” and it has a long memory for local food: its arched-roof shopping center opened in 1960 and still houses saimin and chop suey spots that generations of families grew up on. Danjah Dog speaks the same language – plate-lunch style bentos, island-sauced dogs and burgers made for people who know their grinds.
